As you all know, Father's Day is fast approaching. It will fall on Sunday 17th June 2018, so be prepared and don't say I didn't remind you!

Just like many of us ladies, the men in our lives like a sweet treat every now and then. And just like us, they sometimes like those unusual gift ideas. Most men are bored with the usual; aftershave, shower set etc. Why not try this recipe as an alternative to the boring “same old” gifts?

I figured some men like alcohol and some men like chocolate, so why not combine these two beauties to create a mouth watering, masculine, rich tasting cupcake? By this, I of course mean – GUINNESS AND CHOCOLATE Father's Day cupcakes!

I know, I know; Guinness and Chocolate? But yes, it does really work, they both go together so well that I think they were made for each other. The richness of the chocolate sponge coupled with the malty goodness of the Guinness buttercream are just so fantastic, I couldn't believe it myself!

I won't lie to you. Anytime I make these, my house does smell like a brewery as I have to boil the alcohol off the Guinness prior to using it in the buttercream, which takes about 30 minutes (but it’s so worth it).

These cupcakes are wonderful to make and a pleasant change from the usual pinky purple girly ones I generally do. Why not let the little ones give these a go for their Daddy this Father's Day, he’ll love the home baked gesture and the kids will feel super proud at their accomplishment.

Ingredients for Sponge:

  • 40 grams of butter (salted) at room temperature
  • 140 grams of caster sugar
  • 100 grams of plain flour
  • 20 grams of cocoa powder
  • 1 ½ teaspoons of baking powder
  • pinch of salt
  • 120 mls of whole milk
  • 1 egg (lightly whisked)
  • 2 teaspoons of vanilla essence

Ingredients for Buttercream:

  • 250 grams of butter, softened (salted/unsalted your preference. I used salted)
  • 500 grams of icing sugar
  • 1 teaspoon of vanilla essence
  • 2 tablespoons of milk
  • 1 can of Guinness stout

Pre-heat the oven to 160oC (fan assisted) – usually takes about 10/15 minutes

Bake for: 20 minutes

Directions for Sponge:

  1. beat the butter in a baking bowl until light and fluffy
  2. add sugar to butter and beat together until well mixed
  3. add flour, cocoa powder, baking powder and salt to the mixture and mix until it resembles damp sand
  4. in a jug whisk together the milk, egg and vanilla essence
  5. add half the milk mixture to the flour mixture and mix well
  6. repeat previous step until mixture is smooth
  7. Fill your cupcake cases – makes 12
  8. Transfer to the oven and bake for 20 minutes or until skewer inserted into the sponge comes out clean
  9. Once removed from oven, leave to cool for 10 minutes then transfer to a wire rack to cool completely

Directions for Buttercream:

  1. beat the butter in a baking bowl until light and fluffy
  2. add the icing sugar one quarter at a time (125 grams) making sure the mixture is well mixed before adding the next batch of icing sugar
  3. add the vanilla essence and mix until well incorporated
  4. add the milk to make the buttercream of spreadable consistency
  5. Pour Guinness into a saucepan and boil until the Guinness has reduced down to a thick syrup (will take roughly 30 minutes)
  6. Let this syrup cool down and then add it to the buttercream, mix well

Now you are ready to decorate your cooled cupcakes any way you see fit. A generous helping of buttercream sprinkled with a little bit of cocoa powder usually does the trick.
