As a busy mum of three life can get really hectic. On top of all the demands of family life (scheduling things in our calendar, laundry, homework, regular work…the list goes on) I am always conscious of what I call the three M’s: money, mood and munchies!

Christmas is always difficult financially and it is also a time of great waste. The amount of food we buy and throw away just because it’s the season of indulgence is scandalous. Depending on the amount of food you have leftover you can make more than one pie and freeze them. Plus they’re super quick to make - I make my pie dishes lined with pastry when prepping food on Christmas Eve then it’s just a matter of whipping up some white sauce after Christmas dinner and throwing all the ingredients together - no mess, no fuss! I serve mine with roasties or chips in the New Year and it is always a hit!
