Christmas Dinner Pie


As a busy mum of three life can get really hectic. On top of all the demands of family life (scheduling things in our calendar, laundry, homework, regular work…the list goes on) I am always conscious of what I call the three M’s: money, mood and munchies!

As a mum who struggles with her mental health, I love anything that can simplify my life and make things a little bit easier in both effort and on my pocket. Christmas is always difficult financially and it is also a time of great waste. The amount of food we buy and throw away just because it’s the season of indulgence is scandalous. This recipe for Leftover Christmas Dinner Pie is great because not only does it reduce the food waste from The Big Day but it also saves you a bit of money and effort by creating a meal that you can just bung in the oven. It’s delicious, its nutritious, its environmentally friendly and easy on the pocket - sure what more would you want from a recipe?

Depending on the amount of food you have leftover you can make more than one pie and freeze them. Plus they’re super quick to make - I make my pie dishes lined with pastry when prepping food on Christmas Eve then it’s just a matter of whipping up some white sauce after Christmas dinner and throwing all the ingredients together - no mess, no fuss! I serve mine with roasties or chips in the New Year and it is always a hit!

  • Ingredients

    • Ready roll short crust pastry
    • Leftover turkey
    • Leftover ham
    • Leftover stuffing
    • Leftover carrots/parsnips/sprouts
    • Cranberry sauce
    • 50g butter
    • 2 tbsp plain flour
    • 300ml milk
    • 200ml chicken stock
    • salt and pepper to season
  • Method

    1. Line a pie dish with pastry
    2. In a pan, melt the butter and stir in the flour until it makes a paste. Add the milk and stock, stir until the paste has combined and season to flavour, making a white sauce. Mix in your turkey, ham and vegetables then add to your pie dish
    3. Top the mixture with a layer of stuffing and cranberry sauce, leave to cool and top with a sheet of pastry.
    4. Freeze the pie and reheat for a quick and easy dinner (brush the pastry with milk or a beaten egg before baking to make a golden crust).
    5. When it's time to bake, bake according to pack instructions.
