500gm mixed root vegetables such as carrots, potatoes, parsnip, sweet potato
750ml vegetable stock (Knorr vegetable stockpot)
Salt and pepper to taste
Some fresh cream and black pepper for garnish
Method
Peel and cut all vegetables into even sized cubes
Heat oil in a large saucepan and add in the chopped onion and cook until softened
Add the mixed vegetables and vegetable stock
Season well and bring to the boil
Reduce the heat and simmer with the lid on for 25 minutes
Once all your vegetables are cooked, add the mixture to the blender and blend until smooth. You can also use a handheld blender for this step if you wish
Add more water to the blended soup if you want a thinner mixture
Garnish with a swirl of fresh cream and black pepper, serve with some buttered rolls
