Homemade is way better than the frozen supermarket versions!

  • Ingredients

    • 400g skinless cod fillets
    • 2 tbsp plain flour
    • 1 egg lightly beaten
    • 100g fine polenta
    • Salt and pepper for seasoning
    • 1 tsp smoked paprika
    • Sunflower oil for frying
  • Method

    1. set out 3 shallow dishes to create a 'production line':
    2. Season the flour well with salt and pepper in the 1st shallow dish
    3. Beat the egg lightly in the 2nd shallow dish
    4. Mix the smoked paprika with the polenta in the 3rd shallow dish
    5. Cut the fish fillets into 2cm thick strips and pat dry with some kitchen roll
    6. Coat each strip of fish with the flour, followed by dipping them in the egg and then rolling in the polenta
    7. Ensure that each fish strip is well coated
    8. Put them on a plate and cover with clingfilm
    9. Transfer to the fridge to set for 30 minutes
    10. Heat a deep sided frying pan and add enough oil to cover the base
    11. Add the fish fingers and fry for 2 minutes on each side until golden and crisp all over
    12. Rest them on a plate lined with kitchen roll - this will absorb the excess oil
    13. Serve with some buttery mashed potatoes and cheesy baked beans
