Mums NI Rocky Roads


These oh so easy Rocky Roads will be a real crowd pleaser. Get the kids involved - they will love it. We used a rectangular dish which gave us 16 chunky slices which didn't hang around for long. This tray bake would be ideal for social gatherings.

  • Ingredients

    • 100g butter
    • 260g milk chocolate
    • 3 tbsp golden syrup
    • 150g richtea biscuits broken into pieces
    • 50g raisins
    • 40g glacé cherries cut into quarters
    • 50g mini marshmallows + extra for decoration
    • some sprinkles for decoration
  • Method

    1. Line a square baking tin with baking paper
    2. Melt together the butter, chocolate and golden syrup in a large pot over a low heat.
    3. Once melted, take off the heat and reserve 100g of the mixture into a smaller pot.
    4. To the mixture in the larger pot add the biscuits, raisins, cherries and marshmallows stirring well until everything is coated. The mallows will go gooey at this stage - yum!
    5. Transfer the mixture into a dish lined with baking paper and then pour the reserved melted chocolate on top.
    6. Decorate with the extra marshmallows and sprinkles, if desired.
    7. Place the dish into the fridge to set, for around 1 - 1.5 hours.
    8. Once set, cut into manageable sized chunks and enjoy!
