Mums NI Sweet Strawberry Mousse

Sometimes, just sometimes, we don't want cake for dessert. This light, but sweet, mousse is a great alternative. Have the kids help you make this delightful dessert.

  • 225g strawberries, hulled and sliced
  • 25g caster sugar
  • 85ml cold water
  • 130g mini marshmallows
  • 200ml double cream
  • sprinkles

• Method

  1. Add the strawberries, sugar and water to a pan
  2. Heat gently until the sugar is dissolved and the strawberries start to soften
  3. Use a potato masher, or fork, to pulp the strawberries
  4. Take the mixture off the heat and add in the marshmallows
  5. Keep stirring until the marshmallows are melted.
  6. Leave the mixture to cool
  7. Whip the cream until it starts to take hold
  8. Fold the double cream into the cooled strawberry and marshmallow mix
  9. Add the mousse mixture to decorative serving bowls and top with sprinkles
  10. Place in the fridge until set
  11. Serve and enjoy!
